This is Tim's homemade tomato soup. Often we use our own tomatoes for this, but we also frequently make this with store bought canned tomatoes.
4 tablespoons butter (1/2 stick)
28oz tomatoes
1/2-whole onion - depends on how oniony you are
2 - 3 cups of vegetable broth, 2 for thick, 3 for thin
Italian seasoning to taste
Melt Butter in pan on medium heat
Peel then quarter the onion and toss it in
Wait a minute, then add tomatoes and broth
Turn down heat to low, allow to simmer at least 30 minutes, an hour is cool too.
Season, then blend with immersion blender and serve
